This sounds like what I was looking for. But I'm wondering what information is held in the user profile. For example, are my rules, categories, display settings (including views, conditional formatting, folder pane setup), etc. held in there?

Question: I've found two different export targets, the one you show, and another that uses HKEY_CURRENT_USER\Software\Microsoft\Windows NT\CurrentVersion\Windows Messaging Subsystem\Profiles]
"DefaultProfile"="Outlook"
